Abstract:
This method is suitable for the determination of low reducing sugar contents, e.g. in white sugars including speciality white sugars and plantation white sugars up to a content of 0.05 g/100 g. Such low levels cannot satisfactorily be determined by titration against Fehling’s solution. The method has Official (Reference) status and is the method that ICUMSA recommends for the determination of reducing sugars in white sugar and plantation white sugar in preference to Method GS2-6. The sugar solution is heated with alkaline copper reagent with the residual cupric ions titrated with EDTA. For white sugars containing between 0.009 g/100 g and 0.04 g/100 g reducing sugars, the absolute difference between two results obtained under repeatability conditions should not be greater than 0.004 g/100 g and under reproducibility conditions not greater than 0.007 g/100 g.
