1 Scope

This method is applicable to all raw sugars [1,2] (General Subject1), white sugars and specialty sugars requiring clarification (General Subjects 2 and 3) [3]. It is an alternative to Method GS1/2/3-1 which permits the elimination of clarification with basic lead acetate by using polarimeters with light sources operating in the near infrared (NIR) wavelength range. Such polari- meters are able to read solutions with much higher colour than hitherto.
