Abstract:
This method is used to determine the equilibrium relative humidity (ERH) of crystalline sugars, including white, raw and soft sugars.
The sugar sample is placed in closed loop system containing a pump, thermometers and a Regnault dewpoint apparatus. The ERH is determined once equilibrium is reached in the system by referring to hygrometric tables.
