Abstract:
The dextran content in beet raw juice or beet thick juice is determined via the haze formed by dextran-like polysaccharides when alcohol is added. Dextran in beet raw juice causes severe processing problems, especially in filtration. This method can be used to monitor dextran development during beet processing or in stored thick juice. The method has Accepted Status for beet raw juice with a dextran content between 50 and 500 mg/L and Tentative Status for beet thick juice with a dextran content between 12.5 and 200 m/L. Repeatability and reproducibility data for both beet raw juice and beet thick juice are given in the tables below.
