Abstract:
Thermophilic acidophilic bacteria (TAB) and guaiacol-producing TAB in white sugar (may be appropriate for other products if validation of use is performed) are enumerated. For filterable samples, samples are membrane-filtered and incubated at 45 °C for 5 days. Non-filterable samples are not enumerated but instead inspected for presence or absence of the organisms and require the use of an enrichment procedure followed by incubation at 45 °C for 5 days. The determination of the presence of guaiacol requires the use of any organisms produced from either of the two procedures listed. The method has Accepted Status for white sugar and there are no precision data available.
