Abstract: The sucrose content of white sugar and speciality sugars (not requiring clarification) is determined by polarimetry in the visible wavelength range (540 nm to 633 nm) and expressed in °Z of the international polarimetric sugar scale. The method has Official status. The absolute difference between two results obtained under repeatability conditions should not be greater than 0.066 °Z and under reproducibility conditions not greater than 0.094 °Z.
