Abstract:
This Method is applicable only to low colour in solution sugar syrups and invert sugar syrups for the determination of 5-hydroxymethylfurfural (HMF) by chromatography. The chromatography used is High Performance Liquid Chromatography (HPLC), with separation occurring via a C18 reversed-phase column and detection by absorbance at 284 nm. Identification and quantification of HMF is performed using calibration of known HMF content standards. This Method is suitable for samples containing less than or equal to 240 mg/kg and the limit of quantification (LOQ) is 1 mg/kg. For HMF content up to 15 mg/kg, the relative repeatability is less than or equal to 7% and the relative reproducibility is less than or equal 19%. For HMF content from 15 to 240 mg/kg, the relative repeatability is greater than 7% and the relative reproducibility is greater than 19%.
