Abstract:
Pectic acid is measured by colorimetry using a 3-Hydroxy-Diphenyl-reagent. This method is applicable for the determination of pectic acid in beet raw juice, thick juice and molasses. The repeatability relative standard deviation (RSDr) of this colorimetric method is considered to be 3% at best and 5% at low pectic acid levels.
