Abstract:
This method is suitable for the determination of Reducing Sugars in cane raw sugars. The test sample containing reducing sugars is heated to the boiling point with an excess of a solution containing copper II, which is reduced. Residual copper II is then determined iodometrically. For raw sugars containing between 0.18 g/100 g and 0.74 g/100 g of reducing sugars the absolute difference between two results obtained under repeatability conditions should not be greater than 0.02 g/100 g and under reproducibility conditions not greater than 0.05 g/100 g.
